Americans can sample a little taste of Italy on February 20, 2020, with Whole Foods Market opening pop-up restaurants in several locations across the country. Reservations for the Italian trattorias in New York, Los Angeles, Austin, and Atlanta will open today (February 13, 2020). Foodies can sit down for an evening of Italian "culinary discovery" which will be co-hosted by Whole Food Market's cheese, wine and culinary experts and Italian cheesemakers and prosciutto suppliers. Dubbed "A Little Italy," each event will feature an authentic, "family style" meal composed of six courses. Meals include Cacio e Pepe featuring Pecorino Romano with Parmigiano Reggiano grated tableside and Osso Buco served over creamy rosemary polenta. In addition, during the antipasti course, Italian suppliers will shave prosciutto on-site for sampling and pairing; during the dessert course, trained baristas will expertly pour Allegro Coffee using state of the art La Marzocco espresso machines. From 12:00 p.m. ET today (February 13, 2020), customers can reserve a coveted, complimentary dinner seat, which is on a first come, first served basis.
